Silky Chickpea Gravy

This recipe is from the vegan cookbook Appetite for Reduction by Isa Chandra Moskowitz.

Recipe: see page 56 of Appetite for Reduction.
This really is a guilt-free gravy. It's healthy and it tastes great.

Traditional gravy consists of animal fat, spices and a thickener such as corn starch or flour. This vegan version of gravy is much healthier and only contains one teaspoon of fat, and because it is olive oil, it's a good fat. The taste comes from the thyme, sage and tamari (tamari is kind of like soy sauce), and the body comes from chickpeas and vegetable broth. Whereas traditional gravy relies on a lot of animal fat, this replaces that with a good portion of protein. Good gravy!

Ingredients: chickpeas, onion, garlic, vegetable broth, tamari (or soy sauce), olive oil, thyme, sage, black pepper, arrowroot powder, salt.
