This tasted good once it cooled down a bit, but I think that's the case with most soups. You would
expect that something with pesto in the title would be very high in calories since the main ingredient of pesto is pine nuts, but that isn't the case with this recipe. The base of the soup is cauliflower, basil and vegetable broth (I used Trader Joe's Organic Low Sodium Vegetable Broth). The high-fat pine nuts are only used as a garnish, so this is a very low calorie soup.
Ingredients: cauliflower, basil, vegetable broth, garlic, pine nuts, salt, black pepper, arrowroot powder.
