Have you heard about "pink slime" in the news lately? That's the slurry made from animal carcasses and ammonia that is used as cheap filler in meat at
grocery stores, fast food places and restaurants. AND in school lunches throughout the United States. Well, that reminded me of this cute recipe from The Vegan Dad Cookbook which does a faux version of 'chicken nuggets'. I had to give this a try.
The insides are made from vital wheat gluten (aka 'wheat meat' for it's high protein content) that gives it a chewy nugget style texture. The flavoring comes from vegan chicken-style broth. I've had a hard time finding this. There are vegetarian chicken-style broths, but it seems some online retailers interchange 'vegetarian' and 'vegan'. I was thrilled to find what I needed locally at a new vegan grocery store (?!?!... woo hoo). Check out Viva la Vegan Grocery in Rancho Cucamonga if you are in southern California. They have a fascinating selection of vegan foods, and even shoes, belts and shirts.
Ingredients: vital wheat gluten, poultry spice (McKay's Vegan Special Chicken-Style Instant Broth and Seasoning is used here), garlic powder, onion powder, salt water, olive oil, panko bread crumbs, nutritional yeast, turmeric, paprika, ground flax seed, soy milk (Trader Joe's Unsweetened Soy Milk used here), apple cider vinegar.
