Moroccan Chickpeas and Zucchini

This recipe is from the cookbook Appetite for Reduction by Isa Chandra Moskowitz.

This is a very good vegetable stew. The tomatoes, zucchini and carrots give it a nice sweetness, and there are some interesting flavors in the spices. I never would have thought to put cinnamon in a stew, but it works and gives the dish a very exotic taste. Make sure you follow the instructions and let it sit for 15 minutes after cooking so the flavors can meld. That step adds a lot. The recipe is shown here with a side of quinoa. 

Ingredients: chickpeas, zucchini, tomatoes, baby carrots, garlic, onion, coriander, cumin, cinnamon, red pepper flakes, bay leaves, vegetable broth, salt, fresh mint.
