I really like the vegetable stews in this book, and this is another very good dish. It also gave me an
excuse to use up a bunch of the kale from my garden. This is sweet from the tomatoes and carrots and smoky from the paprika. It has a good array of textures too, from the creaminess of the lima beans, to the chewiness of the kale, to the crumbliness of the tempeh chunks.
Ingredients: tempeh, kale, crushed tomatoes, baby carrots, lima beans, onion, garlic, smoked paprika, bay leaves, oil, thyme, black pepper, red wine, vegetable broth, salt.
