This is a casserole that tastes great and is also very nutritious. It gets roasted a long time inthe oven until the sweet potatoes become chewy on the outside. The pecans become toasted and add a nice crunch. There is only a tablespoon of maple syrup, so it is not overly sweet. This is listed as a casserole in the book, but this would also make a great dessert.
Ingredients: sweet potato, pears, pecans, golden raisins, cinnamon, mirin, vegetable oil, salt and maple syrup.
