Chilled Ginger Peach Soup with Cashew Cream

The temperature is going to be hitting 90 this week, so I want to avoid turning on the oven
if I can. I found this interesting recipe for a cold soup in Vegan Planet.

Raw cashews are often used in vegan cooking when you need to create a milk that is rich and creamy. You just pulverize the cashews in a food processor and add water. Instant milk. You can even pour it on cereal.

This is a tasty soup, but it would make a great smoothie. It's very sweet from the fresh peaches and orange juice concentrate, and the ginger gives it a little zing. There is no cooking. Some mint leaves and chopped cashews are used as garnish.

Ingredients: fresh peaches, ginger, raw cashews, orange juice concentrate, lemon juice and mint leaves (garnish).
