Cajun Beanballs & Spaghetti



This recipe is from the vegan cookbook Appetite for Reduction by Isa Chandra Moskowitz.

I liked the texture of the beanballs, which comes from the black-eyed peas and tempeh. I think the beanballs have potential,
but the thyme overpowered the other flavors to the point where this was almost inedible. The hot sauce and Cajun spices couldn't make up for the otherwise flat flavor in the sauce .

Ingredients: (Black-Eyed Pea & Tempeh Beanballs, page 191): tempeh, black-eyed peas, garlic, thyme, oregano, paprika, black pepper, soy sauce, tomato paste, balsamic vinegar, whole wheat bread crumbs, salt, (Spaghetti): whole wheat spaghetti, zucchini, scallions, (Spicy Cajun Marinara, pages 193,195): crushed tomatoes, olive oil, garlic, thyme, oregano, black pepper, salt, red pepper flakes, Cajun spice blend, hot sauce.
