Chipolte Chili with Sweet Potatoes and Brussels Sprouts

This may seem like an unusual combination of ingredients, but it is quite good. It is sweet and
tangy and the Brussels sprouts provide an interesting texture. Plus, it is very nutritious.

Ingredients: sweet potatoes, Brussels sprouts, pinto beans, crushed tomatoes, red onion, garlic, coriander seeds, cumin, chili powder, oregano, olive oil, water, salt, lime juice.
