Unfried Fried Rice


This recipe is from the vegan cookbook Appetite for Reduction by Isa Chandra Moskowitz.

This recipe can be quickly pulled together if you make the rice in advance, in which case it only takes a few minutes to prepare.


Most traditional fried rice recipes use egg. That has been left out of this recipe, but all the other ingredients remain. Most fried rices also seem to be swimming in oil, and that has been greatly reduced here, with only one teaspoon for the entire batch. The recipe in the book lists a few different possible variations such as including peas, carrots, snow peas, broccoli and zucchini. I included the peas and carrots for this photo.

Ingredients:  jasmine rice (or brown basmati), sesame oil, garlic, fresh ginger, soy sauce, green onion, plus (optional) carrots and peas.
