Lemony Roasted Potatoes

Recipe is from the cookbook Veganomicon by Isa Chandra Moskowitz and Terry Hope Romero.

Might be a great dish if you really like lemony flavors. I haven't figured out what to pair this
with yet because the lemon is so powerful.

Ingredients: russet potatoes, olive oil, lemon juice, vegetable broth, garlic, oregano, tomato paste, pepper, parsley.
