This lentil soup recipe from Veganomicon is one of my favorites. It's easy to prepare and
has a hearty flavor that tastes great on cold rainy days.
Ingredients: onion, carrot, plum tomatoes (I use Trader Joe's canned plum tomatoes), garlic, tarragon, thyme, paprika, vegetable broth, french lentils and bay leaves.
