This was outstanding. The potatoes and peppers were very tender from being roasted in the
oven, and the onions caramelized and were very sweet. And it was very quick to prepare. I think I spent more time cleaning the baking dish than I did preparing everything. This is a great side dish.
Ingredients: Yukon Gold potatoes, red bell peppers, yellow onion, olive oil, basil, red pepper flakes, balsamic vinegar, salt, black pepper.
