Curried Cabbage and Peas

This recipe is from the vegan cookbook Appetite for Reduction by Isa Chandra Moskowitz.

This is a very healthy recipe. It's low calorie, low fat and has lots of nutrients. It didn't have
much taste to it though. That might be my choice of curry powder. It just seemed like it was missing something. The other thing is that the instructions said that when it was ready to serve, the cabbage "should be tender with just a little bit of snap...".   I'm not sure how that's possible, because the cooking time was so long. The cabbage was thoroughly cooked and quite mushy. Definitely no snap.  The recipe didn't specify the type of cabbage, so I used green. Maybe there is a different type that wouldn't cook so quickly.

Ingredients: cabbage, onion, carrot, frozen peas, garlic, fresh ginger, olive oil, curry powder, vegetable broth, salt.
