Linguine with Artichoke and White Bean Alfredo

This recipe is from the cookbook Quick-Fix Vegan by Robin Robertson.

Recipe: see page 71 of Quick-Fix Vegan.
This is a tasty alternative to traditional alfredo sauce, which usually contains the non-vegan ingredients of butter and cream.
The creaminess in this sauce comes from the white beans and olive oil, and the nutritional yeast lends it a little bit of cheesy flavor. I'm not sure too many people would be able to recognize there isn't any dairy in this recipe. There is also a lot of fresh garlic, and it isn't cooked or heated to temper the flavor. This recipe has got some zing. You definitely know you are eating garlic.

Ingredients: linguine, garlic, marinated artichokes, white beans, nutritional yeast, olive oil, fresh parsley, salt, soy creamer (optional, and not included in this photo).
