This vegan side dish combines coleslaw, a popular American salad made with cabbage and carrots,
with soba, a chewy buckwheat noodle from Japan.
Ingredients: soba noodles, shredded cabbage, carrot, scallions, parsley (or cilantro), fresh ginger, rice vinegar, soy sauce, toasted sesame oil, sugar, salt, chopped peanuts, neutral vegetable oil (canola used here).
