Miso Udon Stir-Fry with Greens and Beans

This vegan stir-fry recipe is outstanding. There are a lot of wonderful textures and tastes. The Swiss chard is chewy,
the broccoli a little crunchy, the azuki beans creamy, and the noodles long and slippery. The miso provides a light sauce that brings all the flavors together.

Miso is a paste made from fermented beans or grains. It's very salty and maybe a little nutty. It kind of reminds me of chicken broth, but creamier.

Ingredients: broccoli, miso, brown rice udon noodles, Swiss chard, azuki beans, green onions, garlic, olive oil, sesame seeds, Sriracha hot sauce, salt.
