Mushroom Tibs

I'm not much of a fan of cooked mushrooms (the rubbery texture is not for me), but I really liked this recipe. It's mildly sweet and very spicy, but not in a hot way. Well, maybe a little hot, because there is cayenne, and it's a little zingy from the ginger. It is a very exotic blend of spices. There is only a tiny bit of ground cloves, but make sure you don't leave that out. I think that really makse the flavor.

This is one of those dishes that makes the kitchen smell amazing. Even before I took it out of the oven I knew I was going to enjoy this. Just the smell alone makes me feel like I'm a much better cook than I am.

Ingredients: cremini mushrooms, oil, tomato paste, vegetable broth, garlic, fresh ginger, cayenne, mild curry powder, Hungarian paprika, ground cumin, dried thyme, cardamom, ground cloves, salt.
